SHEPARDS PIE
4 med potatoes
3-4 Tbsp milk
½ tsp seasoned salt
2 tsp cooking oil
1 ½ lb lean ground beef
1 c chopped onion
1 tbsp flour
1 ½ tsp salt
¼ tsp pepper
1/3 c milk
1 c cooked peas
1 c cooked sliced carrot
¾ c cooked kernel corn (optional)
1 tbsp ketchup
1 tsp Worcestershire sauce
1tsp horseradish (optional)
2 tbsp butter (or hard margarine) melted
Sprinkle of paprika
Cook potatoes in boiling salted water till tender. Drain.
Heat oil in fry pan on medium. Add beef and onion. Scramble for about 10 min till beef no longer pink. Drain.
Add next 3 ingredients. Stir.
Slowly add second amount of milk, stir constantly. Heat and stir for about 2 minutes until boiling and thick.
Add next 5 ingredients. Stir. Spread into 2 qt. casserole dish. Spread mashed potatoes over all.
Brush with second amount of butter. Sprinkle with paprika. Bake uncovered in 350 oven for about 30 min. until heated through and potatoes are golden. Serves 6.
BEEF DIP----(Lydia)
3-4 lb lean roast ---trim fat
MIX
½ c soya
1 beef bullion cube
1 bay leaf
3-4 peppercorns or 1 tsp pepper
1 tsp dried rosemary
1 tsp thyme
1tsp garlic powder
Put roast into 6 qt. crock pot, put in mix and add water to cover the roast. I fill the pot. Slow cook 8-10hrs.. Then shred meat and use juice to dip.
Can be done ahead, just heat.
VEGGIE SOUP WITH MAC/POTATOES
Saute 5 lbs hamburger with 2 lbs of onions-salt & pepper and 2 pkgs onion soup mix.
Saute:
3 lbs carrots
1 stalk celery
1 lb onions
5 lbs potatoes or 3 lb macaroni
Put together into 2 stock pots ½ in each, and fill with ½ water and ½ with beef broth.
This will make enough for approx. 200 bowls.
Recipe can also be cut in ½.
MACARONI & CHEESE
2 c macaroni
½ c butter
2tbsp onion
¼ c flour ½ tsp salt
¼ tsp dry mustard
Pepper to taste
2 c milk
2 c shredded cheddar
2 tbsp butter
2/3 c bread crumbs
Mix all then , mix last butter with bread crumbs and place on top of macaroni in 2 qt. casserole.
Bake at 375 for 30 minutes, makes for 4-6 servings
